Cultural Context
Gravlax is a traditional Scandinavian dish of salmon that has been cured with a mixture of salt, sugar, and dill. It is often served as an appetizer with mustard sauce and bread.
Take a 6 oz piece of Atlantic Salmon.
Prepare a spice cure using equal proportions of brown sugar and salt, pickling spice, coriander seed, mustard seeds, and black peppercorns.
Add parsley and dehydrated chili pepper to the spice mixture.
Use a mortar and pestle to mix the spices together.
Add a little touch of liquid, using white wine and bitters.
Apply the spice cure on both sides of the salmon.
Wrap the salmon tightly in plastic wrap.
Place the wrapped salmon on a saucer and weigh it down with a bowl or jar.
Refrigerate for 24 hours to allow the salmon to cure.
After 24 hours, remove the salmon from the refrigerator and wash off the spices under running water.
Pat the salmon dry.
Cut the salmon straight down the center and slice it into thin pieces.
Add a little touch of honey to the sliced salmon for sweetness.
Present the salmon on a piece of foil and garnish with chives.
Vacuum seal the salmon for storage.
