Preheat the oven to 180°C (350°F).

Roll out the dough and place it into a 22 cm tart pan with a removable bottom.

Bake the crust in the preheated oven for about 20-25 minutes or until set.

While the crust is baking, prepare the ganache by heating the fresh cream until just boiling.

Pour the hot cream over the chopped dark chocolate and let it sit for a few minutes before stirring until smooth.

Add the butter to the ganache and mix until melted and combined.

Once the crust is cooled, pour the ganache into the tart shell and let it set.

Decorate with fresh strawberries, sugar paste, and mint leaves before serving.
