Line a 13 by 9 inch baking pan with a foil sling and spray with vegetable oil spray.
Bloom 2.5 tablespoons of gelatin in 0.5 cups of cold water for at least 15 minutes.
In a saucepan, combine 0.5 cups of water, 1.3 cups of corn syrup, 2 cups of granulated sugar, and 0.25 teaspoons of salt; bring to a boil over medium-high heat.
Boil the mixture for 6 to 8 minutes until it reaches 240 degrees.
Secure the whisk attachment on the mixer and pour in the hot sugar syrup slowly while mixing on low.
Gradually increase the mixer speed to high and mix for 10 to 12 minutes until the mixture is opaque white and nearly fills the bowl.
Add 2 teaspoons of vanilla extract towards the end of mixing.
Scrape the marshmallow mixture into the prepared baking pan using an oiled spatula and smooth the top.
In a small bowl, whisk together 0.5 cups of cornstarch and 0.5 cups of confectioners sugar; sift a couple tablespoons over the marshmallow and save the rest for later.
Cover and let the marshmallow set up overnight.
Dust a cutting board with the cornstarch mixture and spray a chef's knife with oil.
Remove the marshmallow from the pan using the foil sling, peel off the foil, and sift more cornstarch mixture on top.
Cut the marshmallow into one inch wide strips and then into cubes.
Roll the marshmallow cubes in the cornstarch mixture and toss in a strainer to remove excess powder.
