1

Peel shrimp and fish heads, and place them in a pot with 1.5 liters of water. Bring to a boil for about 10 minutes to make a broth.

2

Chop the onions, bell pepper, and garlic for the sofrito.

3

Add oregano, pepper, cumin, a little salt, and achiote oil to the sofrito mixture and sauté for about 5 minutes.

4

Add the prepared broth to the sofrito mixture.

5

Add the vegetables that take longer to cook (abichuelas, yuca) and simmer for 15 minutes.

6

Add sweet potato, zapayo, carrots, and cabbage, cooking for an additional 10 minutes.

7

Cut the green plantains into slices and grate half of one plantain, mixing it with achiote oil and half of the ground peanuts to form small balls.

8

Dissolve the remaining grated plantain in cold water and add it to the soup.

9

After 10 minutes, add the plantain balls, the quick-cooking choclo, and the ripe plantain to the pot and bring to a boil again.

10

Once boiling, cook for 7 minutes until the plantain balls float, indicating they are cooked.

11

Add the fish cut into cubes and cook for 5 minutes, then add the shrimp and cook for an additional 2-3 minutes.

12

Season with salt, pepper, and add cilantro before serving.
