Reduce heat to low and add diced carrots and sweet potatoes.
Simmer until vegetables are tender, about 20 minutes.
Stir in spinach until wilted, about 2 minutes.
Season with cayenne pepper, salt, and black pepper to taste.
Finish with a splash of lime juice and garnish with coriander.
