In a bowl, combine 1 cup of all-purpose flour, 1/4 teaspoon of baking soda, and 1/2 teaspoon of sea salt.
Cut in 1/2 cup of cold butter into the dry ingredients using a biscuit cutter.
Add 1 tablespoon of cream cheese to the mixture and continue cutting it in to break up the corn kernels.
In another bowl, whisk together 1/2 cup of buttermilk and 1 1/2 tablespoons of honey.
Pour the buttermilk mixture into the dry ingredients and continue cutting it together until combined.
On a parchment-lined baking sheet, drop the biscuit dough by spoonfuls instead of rolling it out.
Brush the tops of the biscuits with heavy cream and sprinkle with sea salt for shine.
Bake the biscuits in the oven for 10 to 12 minutes until golden brown.
Once baked, place the biscuits in a towel-lined bowl to keep them fresh.
