Ingredients

  • 1 pre-made pie crust
  • 4 large ripe tomatoes, sliced
  • 1 cup shredded mozzarella cheese
  • 1/2 cup fresh basil leaves, chopped
  • 2 cloves garlic, minced
  • 1/4 cup olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp dried oregano
  • 1/2 cup grated Parmesan cheese

Instructions

  1. 1Preheat the oven to 375°F (190°C).
  2. 2Place the pre-made pie crust in a tart pan and press it into the bottom and up the sides.

  5. 5Layer the sliced tomatoes over the cheese, overlapping them slightly.
  6. 6Sprinkle the minced garlic and chopped basil over the tomatoes.
  7. 7Drizzle olive oil over the top of the tart.
  8. 8Add the remaining mozzarella cheese and sprinkle the grated Parmesan cheese on top.
  9. 9Bake in the preheated oven for 30-35 minutes, or until the cheese is bubbly and the crust is golden brown.
  10. 10Remove from the oven and let it cool for a few minutes before slicing and serving.

  • 8 oz Brie cheese, sliced
  • 4 oz Boursin cheese
  • 1 egg, beaten (for egg wash)
  • 1 tbsp fresh thyme, chopped
  • 1/2 tsp black pepper
  • 1/4 tsp salt

Instructions

  2. 2Roll out the puff pastry on a lightly floured surface to about 1/8 inch thick.
  3. 3Cut the pastry into 4-inch squares and place them on a baking sheet lined with parchment paper.
  4. 4Using a knife, score a smaller square inside each pastry square, about 1/2 inch from the edge, being careful not to cut all the way through.
  5. 5Spread a thin layer of Boursin cheese inside the scored area of each pastry square.
  6. 6Place a slice of Brie cheese on top of the Boursin cheese.
  7. 7Sprinkle fresh thyme, black pepper, and salt over the Brie.
  8. 8Brush the edges of the pastry with the beaten egg to give it a golden color when baked.
  9. 9Bake in the preheated oven for 15-20 minutes, or until the pastry is puffed and golden brown.
  10. 10Remove from the oven and let cool slightly before serving.
