1/4 cup white vinegar
1/2 cup pink peppercorns

Heat the milk in a large pot until it reaches 190°F (88°C).

Strain the curds through a cheesecloth and rinse with cold water.

Press the curds into a mold for 1 hour.

Brine the cheese in a saltwater solution for 12 hours.

Air dry the cheese for 24 hours.
