In a large saucepan over medium-low heat, add 5 tablespoons of olive oil.

Add 500 grams of dried meat cut into cubes and desalted, and stir until fried.

Add 5 minced garlic cloves and 1 medium onion cut into cubes, stir-frying until slightly golden brown.

Add 400 grams of cassava cut into smaller bits and stir until incorporated.

Add 3 peeled tomatoes cut into smaller bits and 1/2 red bell pepper chopped into small cubes.

Add enough hot water to cover all the ingredients, along with chives, parsley, coriander, and black pepper to taste.
