Soak the gelatin sheet in cold water for 5-10 minutes.

In a medium saucepan, heat 7 oz (200 ml) of whipping cream with vanilla beans and sugar (don’t make it boiling). When sugar has dissolved, remove from heat, remove vanilla beans, squeeze the gelatin sheet and put it in the warm whipping cream; stir until the gelatin has completely dissolved.

Pour the milk and, when the mix is cooled, add the yogurt.

In a large bowl, whip 5 oz (150 ml) of cold cream until medium peaks are formed.

Gradually and gently incorporate the yogurt mix to the whipping cream.

Pour it in the serving jars and refrigerate until it sets, for about 3-4 hours or better overnight.

For the cherry compote: pit the cherries, put in a pan with one or two tablespoons of sugar and let it cook at high heat for about 10 minutes (stirring and pressing them with a spoon), until cherries are softened.

Let it cool to room temperature then refrigerate until ready to be served.

Before serving, pour the cherry compote over the cream.
