Peel the potatoes and soak them in water immediately after peeling.
Use a slicer to cut the potatoes into thin slices while keeping them submerged in water.
Wash the sliced potatoes 2-3 times in water to remove excess starch.
Soak the potato slices in water for at least 1 hour, or up to 12-13 hours for best results.
Boil water in a pot and add the drained potato slices, along with salt and approximately 0.5 teaspoons of baking soda.
Cover the pot and bring the water to a boil for 2-2.5 minutes, then check the potatoes to ensure they are about 80% cooked.
Drain the potatoes and rinse them with cold water to prevent them from becoming soggy.
Spread the potato slices on a cloth in the sun to dry for 1-2 days, ensuring they do not overlap.
Once dried, heat oil in a pan over medium heat and test the oil by dropping in one chip.
Fry the chips in batches for 5-7 seconds until they turn white and crispy, ensuring they do not burn.
