1

Peel the skin off the large potatoes.

2

In a bowl, take water and use a slicer to slice the potatoes into thin pieces.

3

Soak the potato slices in water for 2-3 hours.

4

After soaking, boil water in a pot and add the potato slices.

5

Add salt to taste, preferably rock salt, for fasting.

6

Press the potato slices lightly in the boiling water.

7

Add a piece of alum to the boiling water to keep the chips white.

8

Cover and boil the potato slices until they are cooked through, about 40 minutes.

9

Once boiled, drain the potato slices in a strainer.

10

To dry the potato slices, use a thin cloth or dupatta and place them under a fan for a day, then expose them to sunlight for 2 hours the next day.

11

After drying, the potato slices should be crisp and ready for frying.

12

Heat oil in a kadhai until hot.

13

Fry the potato slices in the hot oil until they turn white and crispy, then remove them immediately to prevent burning.

14

The fried chips can be seasoned with chaat masala or any spice of your choice.
