1/2 cup whole milk
1 teaspoon plain unflavored gelatin
1/2 cup heavy whipping cream
1/4 cup sugar
1/2 teaspoon vanilla extract
fresh strawberries (for serving)
sugar (for macerating strawberries)

heavy cream

🥗Healthier: Greek yogurt

💰Cheaper: milk + cornstarch

Greek yogurt reduces calories while maintaining creaminess

vanilla bean

🥗Healthier: vanilla extract

💰Cheaper: vanilla essence

Vanilla extract is easier to find and less expensive.

fruit puree

🥗Healthier: fresh fruit

💰Cheaper: canned fruit

Fresh fruit provides natural sweetness and flavor.

1

Start by measuring 1/2 cup of whole milk and pour it into a small saucepan.

2

Sprinkle 1 teaspoon of plain unflavored gelatin over the milk and let it set for about 5 minutes to soften.

3

Place the saucepan on low heat and gently heat the milk until the gelatin dissolves completely, stirring occasionally.

4

To test if the gelatin is dissolved, take a bit of the milk between your fingers; if you feel granules, continue heating until dissolved, but do not let it boil.

5

Once the gelatin is dissolved, add 1/2 cup of heavy whipping cream and 1/4 cup of sugar to the mixture and stir until combined.

6

Remove the saucepan from heat and add 1/2 teaspoon of vanilla extract, mixing well.

7

Pour the mixture evenly into two glass dishes or ramekins.

8

Cover the dishes and place them in the refrigerator to chill for at least 4 hours or overnight.

9

After chilling, remove the panna cotta from the refrigerator. If using ramekins, run a knife around the edges and dip the bottom in warm water to loosen it before unmolding.

10

Serve the panna cotta directly from the dishes or unmold onto a plate. Top with fresh strawberries that have been macerated with sugar for about 15 minutes to enhance their sweetness.
