Heat a non-stick pan over medium heat and add 1.5 tablespoons of olive oil.

Add minced garlic to the pan and lower the heat to avoid burning the garlic, cooking for 2-3 minutes to flavor the oil.

Add 7 medium-sized peeled and thinly sliced potatoes to the pan, along with 1 medium-sized chopped onion and optional scotch bonnet pepper.

Increase the heat to medium and cook the potatoes, stirring occasionally, for about 15 minutes.

After 15 minutes, add salted Pollock to the pan, placing it on top of the potatoes, and cover with a lid to steam for another 10-15 minutes.

Check the potatoes for tenderness and stir to incorporate the Pollock after about 5 minutes.

Adjust the salt as needed, keeping in mind the saltiness of the Pollock.

Increase the heat to medium and remove the lid to allow for caramelization of the potatoes, cooking until desired color is achieved.
