1 lb fish bones
1 teaspoon salt
1/2 teaspoon black pepper
8 oz shrimp
2 tablespoons olive oil
1 medium onion
1 leek
2 stalks celery
2 medium carrots
1 teaspoon red paprika
2 medium red tomatoes
2 tablespoons tomato paste
1/2 cup white wine
1 teaspoon paprika powder
4 cups water
1/4 cup coriander
1 cup small pasta

Organize the fish bones or fish head, in this case, a monkfish head.

Spare the fillet from the fish bone and slice it into very small pieces; season with salt and pepper and reserve.

Peel the shrimp and use all the heads and shells; remove the gut from the back of the shrimp.

Prepare the vegetables for the fish broth: cut an onion, wash and cut a leek into irregular pieces, cut celery, and cut a carrot.

Cut a green and a red paprika and a super nice and sweet red tomato; gather all the veggies for the fish broth.

In a pan, add a pinch of olive oil and immediately add all the shrimp shells; let them get a nice color.

Add all the veggies to the pan and let them roast to refresh the flavors; add white wine.

Add the paprika, tomato, and tomato paste; let it roast and then add a teaspoon of paprika powder.

Fill the pan with water and add a bunch of coriander; cover and let it start to boil.

Add the fish bones or fish head and let it cook for about 15 to 20 minutes; remove the fish bones after this time and let it cool down for about 10 to 15 minutes.

Pair all of the fish from the bones with the broth and let it boil for one hour; strain the broth afterward.

In a hot pan, add a pinch of olive oil and a chopped onion, then add chopped paprika and chopped red tomato; mix everything very well and let these flavors concentrate.

Season with salt and pepper, then add the fish broth and strain it again to ensure there aren't any peels.

Let the fish broth start boiling again; season the shrimp with salt and pepper.

Prepare small pasta for the fish soup; add the shrimp and fish fillet to the boiling broth, taste, and add more salt if needed.

Let it boil for two minutes and then add the fish from the head.
