Add 2 cups of wheat flour to a wide bowl.

Add 1 teaspoon of salt and 2 tablespoons of oil to the flour and mix.

Gradually pour in water while kneading the dough for about 5 minutes until it is not sticky.

Rub a little oil over the dough to retain moisture and cover the bowl, letting it sit for at least an hour.

For the baji, heat 1 tablespoon of oil in a pan and temper with urad dal and chana dal until golden brown.

Add cumin seeds, mustard seeds, red chilies, green chilies, and curry leaves, then sauté.

Add 1 large thinly sliced onion and cook until transparent.

Mix in 1 teaspoon of salt, 1/2 teaspoon of turmeric powder, and 1/4 teaspoon of hing.

Add 3 large boiled and roughly mashed potatoes, mixing well with the onions.

Pour in 1 cup of water and cook for 5 minutes to create a gravy.

Dissolve 2 tablespoons of besan flour in water and add to the baji to thicken, cooking for an additional 2 minutes.

Finish with chopped coriander leaves and mix well.

After an hour, divide the dough into small balls and roll them out evenly.

Heat oil in a pan for frying the puris until hot.

Gently drop the rolled puris into the hot oil, pressing down to help them puff up.

Flip the puris to fry the other side until golden brown.
