2 Tablespoons Oil (for puris)
2 Tablespoons Semolina
Water - As Needed
2 Tablespoons Oil (for sabzi)
1 Teaspoon Cumin Seeds
1 Tablespoon Ginger Chopped
1-2 Green Chilli (Slit)
1 Cup Tomato Puree
1 Teaspoon Red Chilli Powder
1 Teaspoon Turmeric Powder
Salt - To Taste
A Pinch Asafoetida
1 Teaspoon Coriander Powder
1 Teaspoon Fennel Powder
Water - As Needed
4 Boiled Potato
Coriander Leaves (for garnish)

To make poori dough, put wheat flour in a large mixing bowl, add semolina, salt and oil and mix. Add sufficient water to knead into a stiff dough. Cover with a damp cloth and rest for 10-15 minutes.

To make the puris, heat sufficient oil in a kadai.

Divide the dough into small portions, roll into balls and then roll out into thick small discs.

Slide the prepared discs into the hot oil and deep-fry till golden brown and puffed up. Drain on absorbent paper.

To make aloo sabzi, heat oil in a kadai.

Once the oil is hot, add cumin seeds, chopped ginger, green chillies and let them crackle for a few seconds.

Add tomato puree and cook for 2 minutes.

Add coriander powder, fennel powder, asafoetida, turmeric powder, red chilli powder and salt and cook until oil separates from the sides.

Cut the potatoes roughly into cubes and add them in the kadhai.

Add water and let it boil for 10 mins with the lid covered.

Open the lid, stir & let it cook for 3-4 minutes.

Garnish with fresh coriander.

Serve hot with puri.
