Paani Poori

2 bunches mint
1 bunch coriander
6 green chillies
1 inch ginger
1 tsp black salt
1/2 tsp cumin powder
1 tsp chilli powder
1 tsp pepper powder
1 tsp jaggery
1/2 tsp chaat masala
Pinch salt
1 cup tamarind pulp
1 litre water
1 cup dried peas (soaked overnight)
2 green chillies
1/2 onion
few sprigs coriander leaves
1/2 tsp turmeric
Pinch garam masala
1/2 tsp cumin powder
Pinch chaat masala
Salt to taste
1 cup sooji
1 tbsp wheat flour
Pinch soda
1/2 cup water
1/4 tsp salt

Add mint leaves, coriander leaves, green chillies, ginger, black salt, cumin powder, chilli powder, pepper powder, jaggery, dry mango powder, chaat masala, salt and make a fine paste out of it.

Then add chilled water, and dilute as per taste.

Wash and soak dried yellow peas.

Add them to a pressure cooker with a pinch of turmeric and cook till softly boiled.

Transfer into a bowl, add chilli powder, cumin powder, garam masala, salt, green chillies, coriander, and raw onions and mix well.

Mix all poori ingredients in a large bowl and knead well.

Rest for 30 minutes and roll out small pooris from the dough.

Deep fry in medium hot oil.
