Originating from Sweden, Swedish meatballs (Köttbullar) are a beloved dish that showcases the country's culinary tradition of using simple, hearty ingredients. Traditionally served with lingonberry sauce and creamy gravy, they are a staple at festive gatherings and family meals. Today, they have gained international popularity, often appearing on menus around the world, especially in Scandinavian-themed restaurants.
Cut the mushrooms into quarters, keeping them a decent size for texture in the sauce.
Heat a 12-inch cast iron skillet on dry heat to sauté the mushrooms until browned, then set aside.
Melt about 1 tablespoon of beef tallow in the skillet and sauté the diced onions until translucent.
Add 3 tablespoons of garlic to the onions and sauté on low heat to avoid burning.
Add 1 teaspoon of allspice to the onion and garlic mixture and let it cool.
In a mixing bowl, combine 2 pounds of ground beef, 1 egg, and 1 cup of crushed pork rinds.
Add the cooled onion, garlic, and allspice mixture to the meat mixture.
Add 1 teaspoon of worcestershire black pepper to the meat mixture and mix thoroughly.
