Egg Roll in a Bowl

1 tablespoon olive oil
1/2 onion
1 pound ground pork
1 tablespoon olive oil
1 tablespoon garlic powder
1 tablespoon ground ginger
1 bag coleslaw mix
lower sodium soy sauce
black pepper
cooked rice or noodles
green onions
sesame seeds
Sriracha sauce
diced mangoes

Wash hands with soap and water for at least 20 seconds.

Dry hands with a clean paper towel.

Dice half an onion.

Heat 1 tablespoon of olive oil in a large pot over medium heat.

Add the ground pork and crumble it into small pieces. Cook until no longer pink, about 8 to 10 minutes.

Set the cooked pork aside to drain.

In the same pot, add 1 tablespoon of oil and sauté the diced onions over medium heat until soft, about 3 to 5 minutes.

Add the cooked pork back to the pot.

Stir in garlic powder and ground ginger, and let it cook for about another minute.

Add the coleslaw mix, lower sodium soy sauce, and black pepper. Cook for about 5 minutes or until the cabbage is soft and tender, stirring occasionally.

Serve the egg roll mixture over cooked rice or noodles. Sprinkle with green onions, sesame seeds, and Sriracha sauce if desired.

Pair with diced mangoes for a balanced meal.
