Originating from the Indian subcontinent, tandoori kebabs are a staple of North Indian cuisine, traditionally cooked in a clay oven called a tandoor. These flavorful skewers are often enjoyed at celebrations and gatherings, showcasing the rich spices and cooking techniques of Indian culture. Today, tandoori kebabs have gained popularity worldwide, with various adaptations reflecting local tastes and ingredients.

Marinate chicken in yogurt, lemon juice, ginger, garlic, cumin, coriander, turmeric, red chili powder, garam masala, and salt for at least 2 hours or overnight.
Preheat the tandoor or grill to high heat.
Soak skewers in water if using wooden ones for 30 minutes to prevent burning.
Thread marinated chicken onto skewers, alternating with onion and bell pepper pieces.
Brush the skewers with vegetable oil to prevent sticking.
Place the skewers in the tandoor or on the grill, cooking for 15-20 minutes, turning occasionally until charred and cooked through.
Check for doneness; chicken should reach an internal temperature of 165°F.
Remove from heat and let rest for 5 minutes before serving.
Garnish with fresh cilantro and serve with lemon wedges and mint chutney.
