1

Start by preparing the marinade for the kebabs.

2

In a bowl, combine 4 tablespoons of lemon juice and 4 tablespoons of extra-virgin olive oil.

3

Add 4 teaspoons of oregano, 2 teaspoons of paprika, 1 teaspoon of cayenne pepper, 1 teaspoon of cumin, and 1 teaspoon of salt to the bowl.

4

Crush 3 cloves of garlic and add them to the marinade mixture.

5

Mix all the marinade ingredients together until well combined.

6

Place 800 grams of pork shoulder into the bowl with the marinade and toss to coat the meat thoroughly.

7

Cover the bowl with cellophane and refrigerate for a couple of hours, preferably longer.

8

Remove the pork from the fridge after marinating.

9

Take off the cellophane and prepare metal skewers for threading the meat.

10

Thread the marinated pork onto the metal skewers.

11

Preheat the grill to a high temperature.

12

Place the skewers under the grill and cook for about 10 to 12 minutes, flipping them every few minutes to build color.

13

Check that the pork is cooked through and the juices run clear before removing from the grill.

14

Cover the cooked kebabs loosely with tin foil for a few minutes to let them tenderize.

15

Prepare a salad by mixing chopped red onion, jalapenos, cucumber, and tomato in a bowl.

16

Add salt, freshly squeezed lemon juice, and optionally some extra-virgin olive oil to the salad mixture.

17

Mix the salad ingredients together well.

18

Splash a little water on the pita bread and toast it under the grill for 1-2 minutes.

19

Serve the kebabs with the salad and toasted pita bread.
