Soak the saltfish in boiling water for about an hour, then drain and soak in boiling water for another hour.
Fry the soaked saltfish until crispy but not overly crispy, then remove from the pot.
In the same pot, sauté 1/4 onion (cut into small pieces) for 3-4 minutes.
Add 2 cloves of minced garlic and sauté for another couple of minutes.
Add about 1/2 to 3/4 cup of cherry tomatoes and sauté for about 10 minutes.
Add about 1/2 cup of sweet peppers (any color) and sauté for another 5-10 minutes.
Add the fried saltfish to the sautéed vegetables and mix well.
Season with black pepper and adobo seasoning to taste, then add about 2 teaspoons of Bertie's pimento seasoning and mix.
Add 3-4 sprigs of fresh thyme or dried thyme if fresh is not available.
Add about 1/2 cup of pure tomato sauce and 1/2 teaspoon of green seasoning; let it sauté for about 10 minutes.
Add about 2 teaspoons of ketchup for sweetness and 1/2 pack of Goya saison seasoning, then sauté for another 5 minutes.
Add more green seasoning at the end for flavor.
For the dumplings, mix 2 cups of flour with a pinch of salt and some coconut milk powder.
Gradually add about 3/4 cup of water until the dough is firm, then cover with a damp cloth for 5-10 minutes.
Roll out the dough into flat shapes (not necessarily round).
Boil the dumplings until they float, indicating they are done.
In a skillet, sauté some onions until soft, then add pimento seasoning.
Add the boiled dumplings to the skillet and sauté for about 5-6 minutes, flipping occasionally.
Add Jamaican dried thyme and more green seasoning to the dumplings, mixing well to coat them.
