2 to 3 medium size Ripe Tomatoes
1 Cup Sella White Basmati Rice (Rinsed thoroughly with water)
2 Cups Cooked Black Beans (drained/rinsed)
3 Tablespoon Olive Oil
2 Cups Onion - Chopped
1 Teaspoon Dried Thyme
2 Teaspoon Paprika
2 Teaspoon Ground Coriander
1 Teaspoon Ground Cumin
1 Teaspoon All Spice
1/4 Teaspoon Cayenne Pepper
1/4 Cup Water - ONLY IF NEEDED
1 Cup Coconut Milk
Salt to Taste
10g to 25g Cilantro (Coriander leaves) - chopped (OPTIONAL)
1/2 Teaspoon Freshly Ground Black pepper

Thoroughly wash the rice until the water runs clear and drain the black beans.

Chop the tomatoes, red bell pepper, ginger, and garlic, then blend them to a smooth puree.

In a heated wider pot, add olive oil, onion, and 1/4 teaspoon salt. Fry on medium heat until the onions are browned, about 7 to 8 minutes.

Once the onion is browned, reduce the heat to low and add the spices: dried thyme, paprika, ground coriander, cumin, all-spice, and cayenne. Fry for a few seconds.

Add the vegetable puree, black beans, and salt (to taste) to the pot and mix well. Increase the heat, cover the pan, and bring to a vigorous boil.

Once it starts to boil, reduce the heat to medium-low, cover, and cook for about 8 minutes.

Uncover the pan, add the basmati rice and coconut milk, and mix thoroughly. Bring to a boil, then reduce the heat to low.

Cook the rice on low heat for 10 to 15 minutes or until the rice is cooked but not mushy. Turn off the heat once cooked.

Add chopped cilantro and black pepper, mixing gently to avoid breaking the rice grains. Cover and let it rest for 4 to 5 minutes before serving.
