1 lb dried black beans
4 cups water
2 tablespoons olive oil
4 oz bacon
1 medium onion
1 medium tomato
2 tablespoons garlic paste
2 bay leaves
1 teaspoon salt
2 cups white rice

Discard damaged beans and rinse them in cold water.

Soak the beans overnight or for at least 8 hours in a large bowl with enough water to cover.

Discard the soaking water and add the beans to a pressure cooker with 6 to 8 cups of water.

Cook the beans on medium-high heat until pressure builds, then reduce heat to low and simmer for about 20 minutes until tender but not falling apart.

In a separate pot, add a drizzle of olive oil and render the bacon.

Remove all bacon fat except for one tablespoon.

Add onions and cook until translucent, about 3 to 4 minutes.
