2 cups cooked or canned beans, rinsed and drained
1 onion, thinly chopped
1 small/medium carrot, thinly chopped
1 tsp paprika
1 tsp cumin
1 tsp oregano
1/2 tsp crushed red pepper
1 1/4 tbsp tomato paste
2/3 cup water (or as needed)
3 cups cabbage, thinly chopped or shredded
3 cups lettuce, thinly chopped
1 large carrot, grated
lemon juice, flax or olive oil and salt to taste
2/3 cup cashews, soaked overnight
2 garlic cloves
a handful of fresh dill
salt and pepper
3-4 tbsp lemon juice (to taste)
4-5 tbsp water (as needed)
2 cucumbers
1 red onion
4 tbsp pickled jalapenos
2 avocados
2 tbsp olives, pitted and chopped
2 cups cooked rice
a handful of cabbage (maybe a bit more)
a handful of kale (maybe a bit more)
1 cup of frozen berries

Prepare the beans by cooking or using canned beans, then rinse and drain them.

Chop the onion and carrot, and add them to the beans along with paprika, cumin, oregano, crushed red pepper, tomato paste, and water. Cook until heated through and flavors meld.

Prepare the cabbage salad by chopping or shredding the cabbage and lettuce, grating the carrot, and mixing with lemon juice, oil, and salt to taste.

Make the cashew dressing by blending soaked cashews, garlic, dill, salt, pepper, lemon juice, and water until smooth. Store in the fridge.

Prepare the rice separately from the beans and keep them stored for meal prep.

For the anti-inflammatory smoothie, blend together cabbage, kale, frozen berries, water, lemon juice, and ginger until smooth.
