Coconut Shrimp

3/4 cup panko bread crumbs
1 cup sweetened shredded coconut

De-shell and devein the shrimp, keeping the tail on.

Butterfly the shrimp by cutting almost all the way down the center.

Set the shrimp aside in a dish.

In a bowl, add 1 3/4 cup of flour, 1/2 teaspoon of salt, and 1/4 teaspoon of pepper. Mix until well combined and set aside.

Beat 2 eggs in another bowl and set aside.

In a last dish, add 3/4 cup of panko bread crumbs and 1 cup of sweetened shredded coconut. Mix until well combined.

Coat each shrimp first in the flour mixture, then in the egg, and finally in the breadcrumb mixture.

Set the coated shrimp aside and repeat the process until all shrimp are coated.

Fill a deep fryer or pot with vegetable oil and heat it to 375 degrees Fahrenheit.

Fry the shrimp for about 2 minutes until cooked.

Place the fried shrimp on a paper towel-covered plate to drain excess oil.

Plate the coconut shrimp and serve with sweet chili sauce and pina colada sauce.
