Coconut Shrimp

1 lb shrimp (14 to 16 count)
2 eggs
1/2 cup regular water
1 teaspoon Cajun seasoning
1 cup Panko breadcrumbs
sweetened shredded coconut flakes
canola oil (or other vegetable oil)

Peel and devein the shrimp (optional: can buy pre-peeled and deveined shrimp).

Butterfly the shrimp (optional).

In a bowl, add 2 eggs and lightly beat them.

Add 1/2 cup of regular water to the beaten eggs.

Add 1 teaspoon of Cajun seasoning and mix until smooth.

In a separate bowl, add 1 cup of Panko breadcrumbs and sweetened shredded coconut flakes, then mix together.

Coat the shrimp in the egg and flour mixture, shaking off any excess.

Coat the shrimp with the Panko and coconut mixture.

Heat canola oil in a frying pan to between 320 to 340°F.

Fry the shrimp for about 1 to 2 minutes until golden brown.

Remove the shrimp from the frying pan and place on a paper towel-lined plate to absorb excess oil.
