Prepare a plate with equal parts panko breadcrumbs and sweetened flaked coconut.

Dip each shrimp into the flour and cornstarch mixture, shaking off excess.

Coat the shrimp in the egg and coconut milk mixture, ensuring it sticks well.

Then, coat the shrimp in the panko and coconut mixture, pressing to adhere.

Place the coated shrimp on a plate and refrigerate for about 1 hour.

Preheat the air fryer and spray the basket with nonstick cooking spray.

Arrange the shrimp in the air fryer, ensuring they do not touch each other for proper air circulation.

Spray the shrimp lightly with nonstick cooking spray to help them crisp up.

Cook the shrimp in the air fryer at 7 minutes, checking for doneness and crispiness.
