Romanian Fish Roe Spread

Cultural Context

Originating from Romania, this fish roe spread is a cherished appetizer often enjoyed during festive occasions and family gatherings. Traditionally made with fresh fish roe, it highlights the importance of fish in Romanian cuisine, especially in coastal regions. Today, variations exist across Eastern Europe, with many enjoying it as a dip with bread or vegetables.

6 servings
Servings4
100 g carp roe
3-4 slices of bread (with crust; you can use just the crumb if preferred)
300 ml sunflower oil (or more, depending on consistency)
4-6 tbsp sparkling water
Juice of 1 lemon
1 onion, finely chopped
Olives and parsley for garnish

fish roe

🥗Healthier: avocado

💰Cheaper: canned tuna

Avocado provides creaminess while canned tuna is more affordable.

sunflower oil

🥗Healthier: olive oil

💰Cheaper: vegetable oil

Olive oil adds flavor and is healthier.

lemon juice

🥗Healthier: lime juice

💰Cheaper: white vinegar

Lime juice offers similar acidity and flavor.

onion

🥗Healthier: green onion

💰Cheaper: chives

Green onion adds a milder flavor.

1

Soak 3-4 slices of white bread in cold milk.

2

Place the carp roe in a bowl (pre-cleaned and salted roe works best) and whisk for 1-2 minutes.

3

Squeeze the bread well and add it to the roe. Whisk for another 1-2 minutes until smooth.

4

Gradually add a bit of lemon juice.

5

Start incorporating the oil, one spoonful at a time. Add it slowly; too much at once can cause the mixture to separate.

6

Once the spread turns pale and fluffy, alternate between adding oil and lemon juice.

7

When the mixture becomes thick, incorporate sparkling water (2 tbsp at a time) to make it airy and light.

8

Mix in the finely chopped onion (squeeze it if you blend it) until fully combined.

9

Garnish with olives and parsley, or any other pickles you want.
