Heat a wok over high heat and add 500 grams of minced beef; fry for about 5 minutes until browned.

Add 1 tablespoon of sesame oil and 1 tablespoon of light brown sugar; fry for an additional 5 minutes until darker.

Stir in 2 tablespoons of hoisin sauce, 1 tablespoon of dark soy sauce, 2 minced cloves of garlic, 1 teaspoon of lemongrass paste, 0.5 teaspoon of chili flakes, and 0.25 teaspoon of white pepper; stir-fry for another 5 minutes.

Remove the beef mixture from the wok and place it in a bowl.

In the same wok, heat 1.5 tablespoons of neutral oil and add 800 grams of boiled rice and 115 grams of frozen peas; fry for 3-4 minutes, stirring constantly.

Move the rice to one side of the wok and crack 2 eggs into the empty space; scramble the eggs until cooked, about 1 minute.

Mix the scrambled eggs into the rice and peas.

Add 1 tablespoon of dark soy sauce, 0.25 teaspoon of salt, and 1 tablespoon of lemon juice; mix well.

Return the minced beef to the wok and stir-fry everything together for 2-3 minutes until heated through.
