750 gm baby potatoes
4 to 5 tablespoons oil
2 teaspoons fenugreek seeds
230 gm onion
1 teaspoon turmeric powder
1 teaspoon Kashmiri red chilli powder
2 teaspoons sugar
183 gm tomato
Salt to taste
1½ cups hot water
⅓ rd cup green peas
2 teaspoons cumin seeds
Fresh coriander leaves

Heat oil in a pan and add fenugreek seeds and cumin seeds, sauté until fragrant.

Add the sliced onions and cook until golden brown.

Stir in turmeric powder, Kashmiri red chilli powder, and sugar, mixing well.

Add chopped tomatoes and cook until they soften.

Add the baby potatoes and green peas, stirring to coat with the spices.

Pour in hot water and season with salt to taste, bringing to a boil.

Reduce heat and simmer until potatoes are cooked through, adding splashes of water as needed.

Garnish with chopped fresh coriander leaves before serving.
