Aloo Curry

500 gm baby potato
2 onion
2 tomato
4 green chilli
1/2 inch ginger
8-10 garlic
coriander leaf
2 bay leaf
1 black cardamom
1/2 inch cinnamon
1/2 tsp cumin seeds
1/2 tsp sugar
1 pinch hing
1 tsp turmeric powder
1 tsp red chilli powder
1 tsp coriander powder
1/2 tsp cumin powder
1/2 tsp garam masala powder
1 tsp salt
2 glass water
8 tsp cooking oil

Heat cooking oil in a pan.

Add cumin seeds, bay leaves, black cardamom, and cinnamon to the oil and sauté until fragrant.

Add chopped onions and sauté until they turn golden brown.

Add ginger and garlic, and sauté for a few minutes.

Add chopped tomatoes and green chillies, and cook until the tomatoes soften.

Add turmeric powder, red chilli powder, coriander powder, cumin powder, and sugar, and mix well.

Add the baby potatoes and stir to coat them with the spices.

Pour in water and bring to a boil.

Cover and simmer until the potatoes are cooked through.

Add garam masala powder, adjust salt to taste, and garnish with coriander leaves before serving.
