250 grams of potato
Required water to cook
1.5 tbsp of oil
1/2 tsp of mustard
1/2 tsp of urad dhal
Little curry leaves
1 chopped onion
3 nos of crushed garlic
1/4 tsp of turmeric powder
1.5 tsp of red chilli powder
3/4 tsp of kashmiri chilli powder
1 tsp of coriander powder
1/2 tsp of fennel seeds powder
Handful of water
Salt to taste

Heat oil in a pan and add mustard seeds, urad dhal, and curry leaves. Cook until fragrant.

Add chopped onion and crushed garlic to the pan, sauté until the onion is translucent.

Add turmeric powder, red chilli powder, kashmiri chilli powder, coriander powder, and fennel seeds powder. Stir well to combine.

Add the diced potatoes and mix to coat with the spices.

Pour in enough water to cover the potatoes, add salt to taste, and bring to a boil.

Reduce heat and simmer until the potatoes are tender, adding more water if necessary.
