Aloo Curry

3 tomatoes sliced
1 onion sliced
3 green chilies chopped
1 bunch of spinach finely chopped
5 potatoes diced
1 tsp of mustard seeds
1 tsp of cumin seeds
1 tsp turmeric
1 tsp chilli
1 tsp garam masala
salt to taste
3 tbsp of cooking oil

Add 3 tbsp of cooking oil to medium hot pan.

Add mustard seeds and cumin seeds. Once they pop, add onions and green chilies. Cook them till golden brown, adding a little salt to the onions to make them brown faster.

Add tomatoes and cook until the raw flavor is gone.

Add potatoes and spinach (or gongura).

Mix well and add half cup of water.

Cook for 7 minutes and garnish with coriander or cilantro.
