Roasted Rack of Lamb

1 rack of lamb (about 1.5 to 2 pounds)
1 tsp kosher salt
1/2 tsp pepper
1 medium onion, sliced
2 medium potatoes, sliced
2 tbsp fresh rosemary, chopped
4 cloves garlic, minced
1/2 cup cherry pie filling

Season the rack of lamb with a few pinches of kosher salt and pepper on both sides and the ends.

Add sliced seasoned onion and potato to the bottom of the slow cooker.

Lay the seasoned rack of lamb over the top of the onions and potatoes.

Add aromatics like rosemary and several cloves of garlic on top of the lamb.

Cover the slow cooker with a lid and set it to low.

If the lid leaks steam, use saran wrap underneath to block it and prevent evaporation.

After six hours, remove the rack of lamb carefully with tongs, as the bones may start to fall out.

Plate the roasted potatoes and onions, and serve the lamb on top.
