Somali Sambus, a beloved snack in Somalia, is a savory pastry filled with spiced meat or lentils, often enjoyed during celebrations and gatherings. Its origins can be traced back to the Indian subcontinent, reflecting the historical trade connections. Today, sambus are cherished not only in Somalia but also in various East African countries, showcasing the region's culinary diversity and adaptability.

Lentils provide a plant-based protein alternative.

Whole wheat flour adds fiber, while corn flour is often less expensive.
Add all the flour into a bowl.
Add a pinch of salt and some oil (optional).
Gradually add warm water until the dough comes together.
Transfer the mixture onto a floured kitchen counter and knead for 5-7 minutes until smooth.
Shape the dough into a ball and cover to let it rest for 20 minutes.
Shape the dough into a log and cut into five sections.
Roll out each section into small disks, dusting with flour as needed.
Apply oil generously on the rolled disks and stack them, pressing the edges to seal.
Roll out the stacked disks into a circle of 28-30 centimeters in diameter.
Cut the rolled dough into four sections.
Place one section in a heated skillet for about a minute to dry out, flipping to the other side.
Separate the pastry sheets immediately and set aside.
For the filling, combine minced beef, vegetable seasoning, cumin powder, black pepper, paprika, garlic, fresh coriander, and onions in a pan without adding oil or water.
Cook the beef until moisture is released, then add garlic and onions, and turn off the heat after adding the onions.
