1

Start with 4 chicken breasts and wash them with lemon juice.

2

Chop the chicken into preferred sizes.

3

Season the chicken with 1 tablespoon of olive oil, 1 tablespoon of dark soy sauce, and a mix of seasonings (1 teaspoon each of ground black pepper, jerk seasoning, garlic and parsley seasoning, cajun seasoning, paprika, and onion powder).

4

Add 1 tablespoon of fresh thyme and mix everything well, leaving some seasoning for the sauce.

5

Let the chicken marinate for at least 30 minutes.

6

Prepare the sauce by mixing just over 1 cup of warm water with just over 1 tablespoon of dark soy sauce, remaining seasonings, 3 tablespoons of honey, 3 tablespoons of sriracha sauce, and 1 to 2 teaspoons of cornstarch.

7

Heat a pot with just over 3 tablespoons of olive oil and add the marinated chicken, cooking for 3 to 4 minutes on each side until browned.

8

Remove the chicken and add half a teaspoon of crushed garlic, onions, and ginger to the pot, sautéing for 30 seconds.

9

Add chopped carrot, tomato, and fresh thyme, followed by cabbage, and a pinch of salt, cooking for 1 minute.

10

Add bell peppers and cook for an additional 20 seconds, then remove the vegetables from the pot.

11

Pour the prepared sauce into the pot, increase the heat, and let it thicken for 3 to 4 minutes without covering.

12

Add the chicken back into the pot, mix everything well, and let it cook for 1 to 2 minutes uncovered.

13

Serve the stir fry with white basmati rice.
