Energy Balls

1⅓ cups walnuts
½ cup pumpkin seeds
½ cup dried apricots
⅓ cup raisins
¼ cup goji berries
½ cup shredded coconut
a pinch kosher salt
a pinch cardamom powder
¼ cup finely shredded coconut

Preheat your oven to 350°F (175°C).

Place the walnuts and pumpkin seeds on a baking tray. Roast for 5 minutes to eliminate excess moisture and enhance their flavor.

Remove the tray from the oven and set the nuts and seeds aside to cool completely.

In the meantime, place the dried apricots, raisins, and goji berries in a medium bowl. Cover them with room temperature water and let them soak for at least 1 hour to soften.

After soaking, drain the dried fruits thoroughly to remove all excess water.

Transfer the softened dried fruits to a blender or food processor. Blend until you get a smooth, paste-like consistency.

Once the walnuts and pumpkin seeds have cooled, add them to the blender along with the shredded coconut. Blend again until the mixture is well combined.

If desired, add a pinch of kosher salt and cardamom powder to enhance the flavor, and continue blending until the mixture sticks together easily.

Transfer the mixture to a bowl and let it rest in the fridge for about 30 minutes to make shaping easier.

After the resting period, take about 1 tablespoon of the mixture at a time and roll it between your hands to form a small ball.

Roll each ball in finely shredded coconut for a decorative and flavorful coating.
