Maple syrup is a natural sweetener, while agave syrup can be less expensive.
Grab a medium-sized bowl.
Add 1/4 cup of unsalted roasted almond butter to the bowl.
Add 1/4 cup of pumpkin puree to the bowl.
Add 1/2 cup of almond flour to the bowl.
Add 1 tablespoon of chia seeds to the bowl.
Add 1 teaspoon of pumpkin pie spice to the bowl.
Add a pinch of kosher salt to the bowl.
Mix all the ingredients together until well incorporated.
Lay a piece of parchment paper on a plate.
Grab about a tablespoon of the mixture and roll it between your palms to form a ball about the size of a golf ball.
Place the ball onto the parchment paper.
Repeat the rolling process until all the dough is used, aiming for about eight balls.
Place the balls in the freezer to set while preparing the chocolate.
Set up a double boiler using a medium-sized pot with a couple inches of water, bringing it to a boil and then simmering.
Place a glass bowl on top of the pot and add 2 oz of dark chocolate, broken into smaller pieces, into the bowl.
Stir the chocolate periodically until it is melted and smooth.
Remove the pumpkin balls from the freezer.
Dip each ball into the melted chocolate, rolling it to coat without touching the chocolate with your fingers.
Place the chocolate-coated balls back onto the parchment paper.
Sprinkle a pinch of kosher salt on top of each ball, if desired.
Return the coated balls to the freezer to set up.
Once frozen, transfer the balls to a baggie or airtight container for storage in the freezer.
