Ingredients

  • 1 cup rolled oats
  • 1/2 cup peanut butter
  • 1/3 cup honey
  • 1/2 cup ground flaxseed
  • 1/2 cup chocolate chips
  • 1/2 tsp vanilla extract
  • 1/4 tsp salt

Instructions

  1. 1In a large mixing bowl, combine the rolled oats, ground flaxseed, and salt.
  2. 2Add the peanut butter, honey, and vanilla extract to the dry ingredients.
  3. 3Mix well until all ingredients are thoroughly combined.
  4. 4Fold in the chocolate chips until evenly distributed.
  5. 5Using your hands, form the mixture into small balls, about 1 inch in diameter.
  6. 6Place the energy balls on a baking sheet lined with parchment paper.
  7. 7Refrigerate for at least 30 minutes to firm up the energy balls.
  8. 8Once set, transfer the energy balls to an airtight container for storage.

  • 1/2 cup unsweetened shredded coconut
  • 1/4 cup cocoa powder
  • 1/4 cup almond flour
  • 1/2 tsp vanilla extract
  • 1/4 tsp sea salt
  • 1/4 cup dark chocolate chips (optional)

Instructions

  1. 1In a food processor, combine the pitted Medjool dates, shredded coconut, cocoa powder, almond flour, vanilla extract, and sea salt.
  2. 2Blend the mixture until it forms a sticky dough. You may need to scrape down the sides of the processor a few times.
  3. 3If using, melt the dark chocolate chips in a microwave or double boiler until smooth.
  4. 4Scoop out small portions of the dough and roll them into bite-sized balls.
  5. 5If desired, dip each ball into the melted chocolate to coat, then roll in additional shredded coconut for garnish.
  6. 6Place the coated bites on a parchment-lined baking sheet.
  7. 7Refrigerate for at least 30 minutes to firm up before serving.
  8. 8Store any leftovers in an airtight container in the refrigerator.
