Healthy No Bake Energy Bites | Recipe #1 Oatmeal Peanut Butter | #2 Chocolate Date Balls

- ●1 cup rolled oats
- ●1/2 cup peanut butter
- ●1/3 cup honey
- ●1/2 cup ground flaxseed
- ●1/2 cup chocolate chips
- ●1/2 tsp vanilla extract
- ●1/4 tsp salt
Instructions
- 1In a large mixing bowl, combine the rolled oats, ground flaxseed, and salt.
- 2Add the peanut butter, honey, and vanilla extract to the dry ingredients.
- 3Mix well until all ingredients are thoroughly combined.
- 4Fold in the chocolate chips until evenly distributed.
- 5Using your hands, form the mixture into small balls, about 1 inch in diameter.
- 6Place the energy balls on a baking sheet lined with parchment paper.
- 7Refrigerate for at least 30 minutes to firm up the energy balls.
- 8Once set, transfer the energy balls to an airtight container for storage.

- ●1/4 cup dark chocolate chips (optional)
Instructions
- 1In a food processor, combine the pitted Medjool dates, shredded coconut, cocoa powder, almond flour, vanilla extract, and sea salt.
- 2Blend the mixture until it forms a sticky dough. You may need to scrape down the sides of the processor a few times.
- 3If using, melt the dark chocolate chips in a microwave or double boiler until smooth.
- 4Scoop out small portions of the dough and roll them into bite-sized balls.
- 5If desired, dip each ball into the melted chocolate to coat, then roll in additional shredded coconut for garnish.
- 6Place the coated bites on a parchment-lined baking sheet.
- 7Refrigerate for at least 30 minutes to firm up before serving.
- 8Store any leftovers in an airtight container in the refrigerator.
