Instructions
- 1Heat oil in a pan over medium heat until shimmering.
- 2Fry peanuts in the hot oil until golden, about 2-3 minutes.
- 3Remove peanuts and set aside, leaving oil in the pan.
- 4Add chopped onions to the pan and sauté until translucent, about 3-4 minutes.
- 5Stir in chopped tomatoes and green chilies, cooking until tomatoes soften, about 2-3 minutes.
- 6Mix in boiled potatoes and spices, cooking for another 2 minutes.
- 7Add puffed rice to the mixture and toss to combine evenly.
- 8Remove from heat and stir in chopped coriander leaves.
- 9Drizzle with lemon juice and mix well before serving.

- ●1/4 cup tamarind chutney
- ●1/4 cup green chutney
- ●1 tsp chaat masala
- ●1/2 tsp red chili powder
- ●1/2 tsp salt
- ●1/4 cup sev (crispy chickpea noodles)
- ●1 lemon, juiced
Instructions
- 1In a large mixing bowl, combine the puffed rice, chopped onions, chopped tomatoes, boiled potatoes, and chopped cucumber.
- 2Add the chopped coriander leaves to the mixture.
- 3Pour in the tamarind chutney and green chutney, mixing well to combine all the ingredients.
- 4Sprinkle the chaat masala, red chili powder, and salt over the mixture.
- 5Toss everything together gently to ensure the puffed rice is well coated with the chutneys and spices.
- 6Add the lemon juice and mix again to incorporate the flavors.
- 7Just before serving, top the bhelpuri with sev for added crunch.
- 8Serve immediately in individual bowls or plates.
