1

Prepare the spicy masala by dry roasting mustard seeds, dry coriander, white cumin, white sesame seeds, and dried red chilies in a frying pan on low to medium flame until fragrant.

2

Cool the roasted spices and grind them into a coarse powder.

3

For the red sauce, add 2 cups of water to a pan and mix in 1 tablespoon of flour and 1 teaspoon of salt.

4

Add a few drops of red food color to the mixture and stir well while the flame is off to avoid lumps.

5

Turn on the flame and cook the mixture for 2-3 minutes, stirring continuously until it thickens slightly.

6

Remove the sauce from heat and let it cool.

7

In a large bowl, add 2 cups of puffed rice that has been dry roasted for extra crunch.

8

Add 2 boiled potatoes cut into cubes and 1 cup of boiled chickpeas.

9

Include 1/2 cup of chopped cabbage, 1 chopped cucumber, 1 medium chopped onion, and 1 chopped tomato (seeds removed).

10

Add 1 chopped green chili and fresh chopped coriander leaves.

11

Squeeze in the juice of 1 lemon for flavor.

12

Mix in crispy snacks like sev and peanuts as desired.

13

Add the previously prepared spicy masala and 1 teaspoon of chaat masala, adjusting salt to taste.

14

Finally, add the cooled red sauce to the mixture just before serving to maintain crunchiness.
