1 pound ground chicken
3 cloves garlic, minced
1 medium onion, diced
1/4 cup hoisin sauce
2 tbsp soy sauce
2 tbsp rice wine vinegar
1 1-inch piece ginger, peeled and grated
1 8 oz can water chestnuts, drained and diced
1 tsp crushed red pepper
Salt & pepper to taste
1 head butter lettuce

Heat olive oil in a large pan over medium heat.

Add in ground chicken and onion and crumble using a spatula. Cook until chicken is browned and onion is translucent, about 4 minutes.

Add in hoisin sauce, soy sauce, rice wine vinegar, ginger, water chestnuts and crushed red pepper. Cook for about 2 minutes.

Season to taste with salt and pepper.
