Cut the bottom part off the white and brown beach mushrooms to prepare them.
Cut off the bottom stem of the enoki mushrooms and slice them into bite-sized pieces.
For the king and regular oyster mushrooms, cut off the bottom stem and slice into bite-sized pieces.
Blanch the mushrooms in a pot of boiling water for about 30 seconds, then quickly drain and pat dry with paper towels.
In a small bowl, combine lime juice, fish sauce or white/light soy sauce, sugar, and dried chili flakes; stir until the sugar dissolves and adjust to taste.
Combine the blanched mushrooms, dressing, shallots, scallions, mint, cilantro, and toasted rice powder in a bowl.
Serve the mixture at room temperature with sticky rice and crisp lettuce leaves for wrapping.
