¾ cup creamy peanut butter
¼ cup Marukan Lite Seasoned Rice Vinegar
⅓ cup reduced sodium tamari or gluten free soy sauce
3 tablespoons brown sugar
1–2 tablespoons chili garlic sauce
2 teaspoons fresh grated ginger
1 medium carrot
5 green onions
1 teaspoon sesame oil
1 tablespoon vegetable oil
4 cloves garlic
2 shallots
1 pound ground beef or turkey
1 (8 ounce) can water chestnuts
1 head Bibb or Red leaf lettuce
½ cup roasted, salted peanuts
Fresh cilantro leaves
Fresh mint leaves

Combine peanut butter, Marukan Lite Seasoned Rice Vinegar, tamari, brown sugar, chili garlic sauce, and ginger. Stir until smooth adding warm water as needed to thin the sauce.

Combine the relish ingredients (carrot, green onions, Marukan Lite Seasoned Rice Vinegar, tamari, sesame oil) and let sit at room temperature while preparing the ground beef or turkey.

Heat 1 tablespoon vegetable oil in a large skillet over medium-high heat. Add the garlic, shallots, and ginger and cook, stirring, for 1–2 minutes or until fragrant but not letting the garlic burn.

Add the ground turkey or beef and cook, 5–6 minutes. Add ⅓ cup peanut sauce and the water chestnuts, and continue to cook, stirring, until the ground beef or turkey is sticky and coated, about 3 minutes.

Serve the ground beef or turkey in lettuce cups topped with relish, peanuts, mint, and cilantro leaves with peanut sauce on the side.
