Vietnamese Chicken Lettuce Wraps

Start by preparing the chicken mince in a bowl.
Grate ginger into the bowl, removing only the rough parts of the skin.
Add garlic to the bowl.
Chop the chili without deseeding it and add to the mixture.
Season the mixture with salt and pepper.
Add half a teaspoon of toasted sesame seed oil to the mixture.
Pour in a bit of fish sauce and soy sauce for flavor and color.
Add sesame seeds to the mixture.
Zest a lime and add it to the mixture for a lift in flavor.
Heat a frying pan and add coconut oil to it.
Once the oil is hot, add the chicken mixture to the pan, ensuring not to overcrowd it.
Cook until the chicken is browned and caramelized, checking for sticking to determine readiness to turn.
Remove the cooked chicken from the pan and place it in a bowl.
Prepare the lettuce by using butter lettuce or iceberg lettuce as the wrap base.
Shave cucumber and add it to the bowl.
Shave carrots and add them to the bowl.
Slice red pepper thinly and add it to the bowl.
Chop spring onions and add them to the bowl.
Layer the lettuce with cucumber shavings, carrot shavings, red pepper, fresh basil, coriander, and spring onions.
Roll the lettuce wrap and serve it in a bowl.
To make a quick dressing, mix sweet chili sauce, soy sauce, lime or lemon juice, chopped spring onion, and chopped coriander in a bowl.
Serve the dressing alongside the wraps for dipping.
