Reheat leftover bakaw in a pot.
Remove the carrots from the bakaw and set aside.
Take the beef shank and tendon out of the bakaw and shred the meat using two forks.
Chop half a white onion and a handful of cilantro, mixing them together in a bowl.
Cut the lime into wedges.
Heat corn tortillas in a non-stick pan over medium-high heat.
Add shredded mozzarella cheese to the tortillas.
Add shredded bakaw to the tortillas and let cook for a couple of minutes.
Add the onion and cilantro mixture to the tacos, fold them over, and cook for another minute until the cheese is melted and the tortilla is slightly crisp.
Plate the tacos and garnish with more onions, cilantro, and lime wedges.
