Instructions
- 1Prepare the dough by mixing flour and water until smooth; let it rest for 30 minutes.
- 2In a skillet, sauté onion and garlic until translucent, about 5 minutes.
- 3Add ground lamb to the skillet; cook until browned, about 7-10 minutes.
- 4Season the meat mixture with salt, black pepper, cumin, and chili flakes; stir well.
- 5Roll out the rested dough on a floured surface until thin.
- 6Cut the dough into small squares, about 3 inches each.
- 7Place a spoonful of the meat mixture in the center of each square.
- 8Fold the corners of the dough over the filling to form a dumpling shape; pinch to seal.
- 9Bring a large pot of salted water to a boil; gently add the manti in batches.
- 10Cook the manti until they float, about 5-7 minutes.
- 11In a separate pan, melt butter and add paprika; cook until fragrant.
- 12Serve the manti topped with yogurt, butter sauce, and a sprinkle of parsley and mint.
- 13Drizzle with lemon juice before serving for added brightness.

- ●2 cups shredded cheese (cheddar or mozzarella)
- ●1 cup milk
- ●1/4 cup all-purpose flour
- ●1/4 cup butter
- ●1/2 tsp salt
- ●1/4 tsp black pepper
- ●1/4 tsp garlic powder
- ●1/4 tsp paprika
- ●1/2 cup breadcrumbs (optional)
Instructions
- 1Preheat the oven to 375°F (190°C).
- 2In a large pot, bring salted water to a boil and blanch the cauliflower florets for about 5 minutes until slightly tender. Drain and set aside.
- 3In a saucepan, melt the butter over medium heat. Stir in the flour and cook for 1-2 minutes until golden.
- 4Gradually whisk in the milk, stirring constantly until the mixture thickens and is smooth.
- 5Add salt, black pepper, garlic powder, and paprika to the cheese sauce. Stir in 1 1/2 cups of the shredded cheese until melted and combined.
- 6In a baking dish, arrange the blanched cauliflower florets. Pour the cheese sauce over the cauliflower, ensuring it is well coated.
- 7Sprinkle the remaining cheese on top. If using, add breadcrumbs for a crunchy topping.
- 8Bake in the preheated oven for 25-30 minutes until bubbly and golden on top.
- 9Remove from the oven and let it cool for a few minutes before serving.

- 4In a bowl, mix the yogurt, minced garlic, salt, black pepper, paprika, and cumin until well combined.
- 5Place the cooked cauliflower on a serving platter and drizzle with olive oil.
- 6Pour the yogurt mixture over the cauliflower, ensuring it is well coated.
- 7Garnish with chopped parsley before serving.
- 8Serve warm or at room temperature.
