5 cups all purpose flour (750 g)
1 1/2 tsp salt
3 tbsp oil (45 ml)
2 cups warm water
1 kg ground beef
2 tsp salt
2 tsp 7 spice mix
2 tsp Aleppo pepper
1 tbsp ghee
1 small onion diced
2 tsp fresh garlic
black pepper
1 cup tomato passata
1/2 cup beef stock
1/4 tsp salt
1 cup plain yogurt
1 small clove of garlic
a little salt

Make the dough by mixing flour, salt, oil, and warm water until smooth.

Prepare the meat filling by combining ground beef, salt, 7 spice mix, and Aleppo pepper.

Cook the diced onion and garlic in ghee until soft, then add to the meat mixture.

Roll out the dough and cut into squares, fill with the meat mixture, and seal.

Prepare the tomato sauce by combining tomato passata, beef stock, diced onion, garlic, and seasonings in a pan and simmer.
